The taller the head, the less actual liquid. Any place that serves mostly air is profiting. The picture in OP is 90% foam. They’re paying for air.
PSA: You’re paying for beer. The foam/head is beer they’re not serving you. It’s pure profit for the brewery/bar. You do the math.
