    White bean & jamón serrano soup (still have some beans leftover need to use, or I may just use them in enchiladas).

    Market goodies pasta.

    Onion, pancetta, garlic, splash of wine, cherry toms, and then some blue cheese crumbles though. Mixed through pasta and kale.

    And greek salad on the side (I bought a LOT of tomatoes on sale!). Got enough for lunch and maybe dinner tomorrow too .

        Ah man been awhile since I’ve had these…one of those dishes my mother used to make and freeze, then put in the oven when it was frozen with the timer set so it was done when the entire house came home for dinner…now it’s trendy to call it “food prep” lol back then with 6 of us it was called “survival”!

        Might just get some made for the day off!

          I admit I don’t know much about Tex-Mex but it was good and my husband and daughter want me to make it again. There’s leftovers for tomorrow and the man even got some lunch for tomorrow too so I guess it’s a win.

    I made some scrambled eggs with shredded ham, butter and a bit of maple syrup. Was nice. Slightly overcooked the eggs more than I like but it was still good.
